15 Easy Bisquick Dessert Recipes

Oh, friends. Do you ever get that “need dessert NOW” feeling? Because I do. All the time. And I’m here to tell you about my go-to baking shortcut. Bisquick!

This is not just for pancakes, you guys. We’re talking cookies, cheesecake (yes, CHEESECAKE), and gooey, amazing cakes.

These recipes are fast, they are simple, and they are 100% delicious. You’re gonna want to keep this list handy. Trust me.

1. Impossible Coconut Custard Pie

You guys, six ingredients. For a whole coconut custard pie. YES. It’s true! That is the magic of Bisquick right there. You just blend everything up, pour it in the pie dish, and bake it until it’s golden.

While it’s in the oven, the crust just forms itself while the custard gets perfectly cooked and set. It’s so good. If you want a little extra coconut punch, I’d swap the milk for coconut cream.

2. Gluten-free Bisquick Snickerdoodles

I’m just gonna say it again: gluten-free Bisquick is a total winner. And honestly? Nobody will ever know these are GF. We are so past those days of sad, grainy gluten-free treats.

I would 100% pick these over regular snickerdoodles, they are that good. These are soft cookies, and they get cinnamon in the dough plus they’re rolled in a cinnamon sugar coating.

You should probably just make a double batch. I’m just saying, one batch is not going to last.

3. Easy Chocolate Pudding Cake

Okay, hot take: I will always choose a warm, saucy cake over a slice with frosting. Always. And the best part about this recipe? It makes its own sauce. For real.

The cake bakes, and this amazing, wonderful sauce just happens right in the bottom of the dish. When you go to scoop it out, the sauce is just waiting for you right underneath. Ugh. SO GOOD.

4. Apple Cobbler

This one is a little different from your average cobbler. Normally you’d have fruit on the bottom and spoon the topping over it, right? This one is more like an apple cake. (And I’m pretty sure it’s totally acceptable for breakfast.)

You mix the Bisquick with sugar and milk and pour that straight into the dish. Then you top it with the chopped apples and spices. And here is the magic part: you pour hot water over the entire thing.

Do not stir! Just trust it. Bake it. You have to see it to believe how good it is.

5. Raspberry Bars

Alright, you caught me. These are really similar to the strawberry crumble bars. But I am standing by both of them, and I will 100% be making them both again before December hits.

I mean, with Christmas on the way, we need all the simple dessert recipes we can get, right? And just think how amazing these will be for filling up a cookie platter!

6. Impossible French Apple Pie

So, French apple pies tend to have that yummy crumbled topping, and this one totally does too. What makes this one so different is that the crust is made with Bisquick.

This is just genius, especially if you’re out of time or just have bad luck with pastry (I have so been there). Just like that brownie pie, the Bisquick sinks down to the bottom. The crust literally forms while the pie bakes.

You don’t roll anything. No blind baking. Everything, apples included, goes right into one dish. When it’s done, you get tender apples, a firm crust, and a crunchy top. A total win.

7. Raspberry Cheesecake Danish

I am so obsessed with Danish pastries. And this easy recipe? It’s my new weekend go-to, hands down. They are so great for a fast breakfast, or just a little snack in the afternoon with some tea.

You bake the jam and cream cheese filling right inside the dough. Then you finish it all off with a sweet glaze drizzle. The dough itself isn’t super sweet, so that glaze really helps. Don’t be shy with it!

8. Blueberry Bisquick Mug Cake

My problem with mug cakes has always been the texture. They just get rubbery, you know? Usually from over-mixing or over-cooking. And that is exactly where Bisquick comes in to save the day.

Because it’s a mix, the cake turns out so light and fluffy, with these amazing little bursts of fruit. When you need that sugar fix, like, right now, this recipe is the one. It will 100% do the trick.

9. Bisquick Velvet Crumb Cake

This cake is just so simple. It’s light, it’s tender, and it has this amazing sweet and crunchy topping. The vanilla cake part is a one-bowl deal and takes just minutes.

For that nutty topping, you mix up coconut, brown sugar, nuts, butter, and milk.

You spread that over the cake after it’s baked. Then, pop it under the broiler for a few minutes until that sugar gets all caramelized. YES.

Want to make it extra decadent? Toss some chocolate chips into the topping mix.

10. Bisquick Chocolate Chip Cookies

I know what you’re thinking. Bisquick cookies? They’re going to be cakey. But I promise you, they are perfectly chewy on the inside and have that crisp, golden edge we all love.

My one tip: scoop the dough and keep it in a ball. That helps them stay puffy and not spread too much. Just be careful not to overbake them if you want to keep them chewy! (Unless you like them cakey, then you do you.)

And hey, chocolate chip cookies are amazing, but you could totally add more fun stuff in, like with Kitchen Sink Cookies!

11. Strawberry Crumble Bars

I make crumble bars at least twice a month. I’m obsessed. Is there anything better (or easier) than a shortbread base, a fresh fruit filling, and that crumbly topping? It’s just so simple and SO delicious.

The Bisquick makes the base come together in no time, and I really love that there are oats in there for extra texture. Just one little warning: be careful with the almond extract. A tiny bit goes a very long way.

12. Rhubarb Pie

This one is a lot like the apple and coconut pies we talked about, but with a few little changes. The Bisquick still sinks to the bottom to make the crust, and the filling becomes a custard that sets up all around the rhubarb.

But the topping here is this fantastic streusel. We’re talking brown sugar, cinnamon, and walnuts. YUM. If rhubarb on its own is a little too tart for you, just add some strawberries to the filling. That will give it a little extra sweetness.

13. Impossible Chocolate Brownie Pie

This recipe isn’t just easy, it’s also a lighter version, which is pretty great. It uses applesauce for moisture and that heart-healthy Bisquick, which helps cut calories but totally keeps the flavor.

You blend everything until it’s smooth and then bake it in a slow cooker for three to four hours. While it’s cooking, some of the Bisquick sinks down to make a base (like a pie!), and the rest stays on top to make a dense, fudgy brownie. So, so good.

14. Impossible Cheesecake Pie

So for this one, the Bisquick doesn’t sink to the bottom. Instead, it blends right into the cream cheese filling and makes a super dense, smooth cheesecake.

Because of the baking powder in the Bisquick, the cheesecake will puff up a little bit, but what you get in the end is this amazing crustless cheesecake. And the best part? No water bath! YES.

I would serve this with a fruit compote or just, like, a ton of salted caramel.

15. Red Velvet Bisquick Cookies

Red velvet cake is one of my all-time favorite desserts. And I’m telling you, these red velvet cookies are just as impressive. They are so soft and chewy, and they’re loaded with creamy white chocolate chips in every single bite.

If you’re looking for an easy dessert for Valentine’s Day, you absolutely have to make these.

16. Gluten-Free Lemon Squares

That gluten-free Bisquick mix is a total game changer. It just makes dealing with dietary needs so, so much easier. The shortbread base here is super simple—just Bisquick, butter, and powdered sugar.

It’s crumbly, and it will absolutely melt in your mouth once it’s baked. And you don’t even need a water bath for the lemon topping! Just blend it all together and bake it right on that base. Love it.
