This rich, savory beauty takes a bit more time than the other salads on the list, but if grilled veggies are your love language, you won’t mind the extra effort one bit. There’s a distinctive smoky flavor that’s hard to describe simply because so many contrasting ingredients are at play.
Almonds, hazelnuts, sea salt, chiles, tomatoes, endives. Xato truly has a little bit of everything. You can even add anchovies if you feel like it.

I couldn’t wrap up this list without including my favorite category: pasta salad. It might not be the healthiest salad in the world, but it’s hands down one of the most irresistible, and this Spanish version uses only seven simple ingredients.
You can cook the pasta and have the whole thing ready to eat in just 20 minutes. But the real reason I’m obsessed? Those flavors are so intensely delicious, every bite makes me do a little happy dance.
9. Spanish Chickpea Salad

10. Trampo
At first glance trampo might look a lot like the Spanish summer salad, but the two are totally different once you taste them. This one is fresher, lighter on herbs, and made with only five ingredients: tomatoes, green peppers, onions, olive oil, and salt.
It tastes less like a highly seasoned salsa hybrid and more, ironically, like a true raw summer salad. I love how clean and uncomplicated it is.
