Calling all taco lovers! And all burrito lovers! It really doesn’t matter what your thoughts are on weeknight dinners, because this is a collection of recipes in a league entirely of its own.

I will be the first to admit that I typically don’t have time for complicated meals. However, I absolutely love these cozy, flavorful Mexican casseroles. That’s my testimonial for all the busy families.

Just give them a try. I dare you not to like them.

Okay, so this one might not be the healthiest casserole on the list. It’s fine. We’re fine. This is a super fun one for a cheat day or a big game day with friends.

It’s a totally delicious combination of taco-seasoned ground beef, salsa, and lots of cheese. And all of that goodness gets loaded right on top of a bed of nacho cheese Doritos. Yes, please.

I love authentic tamales, but they are so time-consuming. Let me show you a cheat code. This recipe is close enough and just lightning-fast.

The bottom layer has all those yummy filling flavors you want, with a gratifying mix of ground beef, cheese, spices, canned tomatoes, and an assortment of other veggies. Then, a tender cornbread recipe on top mimics the masa. Yum!

If you don’t have steak strips, I think this would make a terrific sausage breakfast casserole.

If you love salsa verde as much as I do, you’ll go nuts for this bright and tender chicken recipe. This casserole is like the green goddess of the carnivorous Mexican world.

Not only does it call for a hefty amount of salsa verde, but there are also some vibrant jalapeños and fresh cilantro to boot. Sign me up.

8. One-Pot Cheesy Rice Chile Relleno Casserole

Between all the grating, stuffing, battering, and frying, Chili Rellenos require a ton of work. Ugh. Luckily, this version dials it down a bit, turning them into a slightly healthier version in casserole form.

You’ll still char the peppers and remove the seeds as usual. But rather than stuffing, you’ll cook them with rice and a few extra ingredients like tomatoes, oregano, and Oaxaca cheese. It’s not as saucy as most Rellenos, but it’s delicious in its own way.

For a leaner version, ground turkey works. A++. You can also leave the meat out entirely to make it vegetarian. Or, for a protein boost, try making some tofu “ground beef.”

Oh, and the fact that both of those are swimming in salsa verde. YUM. While the pork is spot on, I do think ground beef, turkey, or a vegan protein will work equally as well.

If you love Mexican street corn, you’ve got to give this one a try. I’m drooling already! It’s an entire casserole dedicated to corn, all mixed with sour cream, spice, and queso fresco.

Top this with an extra sprinkle of spice, more cheese, and cilantro to get the full effect. This is the bowl life.

14. Cheesy Baked Chilaquiles

I bet you never thought it would be this easy to make a delectable batch of chilaquiles. And when you turn them into a casserole, it becomes even more straightforward!

This classic Mexican breakfast gets a fun twist with just eight ingredients, including tortilla chips, cheese, and eggs. It’s on. You can add as much or as little salsa as you like; it’s easy to adjust to your liking.

15. Carnitas Pulled Pork Enchiladas

Carnitas are the holy grail of authentic Mexican cuisine, and these enchiladas are just chock-full of that tender pork. They also have some hearty pinto beans, green chilis, and rice in the mix too.

Throw in some spicy enchilada sauce and cheese, and these enchiladas mean serious business. But not so serious that you can’t have these on the table in an hour. We love, love, love this recipe.

Here’s another excellent way to turn Mexican rice into a meal. You’ll just spruce up white rice with some Mexican-style fillings like green chilies, corn, and black beans.

Then, slather it all in enchilada sauce and broil it until the cheese starts to bubble. Done deal.

This 30-minute meal is one of my favorite easy ground beef recipes ever, and it’s all down to the homemade Mexican spice blend. Never made your own spice blend before?

Don’t worry; it’s insanely easy, and I bet you have all the components available in the pantry. The beauty of making your own blend is controlling the heat.

So, although I typically add extra cayenne, you could up the paprika instead to make it more smokey. Add in some rice, veggies, black beans, and cheese; then boom, you’ve got a scrumptious Mexican casserole hot on the table in a flash.

22. Sopa Seca de Fideo

If that last recipe has you craving a Mexican lasagna that’s more Italian than South-of-the-Border, try this. Sopa Seca de Fideo is essentially a Mexican casserole with noodles.

You’ll cook Fideo noodles in tomatoes and broth, then top it with fresh fixings like queso fresco and avocado. It’s not your traditional pasta dish or casserole recipe, for that matter! But it’s seriously worth trying. I am very, very into this.

23. Chicken Fajitas Casserole

Another fabulous use of your casserole dish is making these tasty deconstructed chicken fajitas. This is just a really lovely, really fresh way to do it.

It’s full of tender peppers and onions along with shredded chicken, making it filling, delicious, and colorful to boot. Of course, it wouldn’t be a Mexican casserole without a topping of cheese! We got this.

I love this cheesy-chili casserole for breakfast, but it’s satisfying and tasty no matter the time of day.

The beef and eggs make it super hearty, but the roasted green chiles are my favorite part. Well, that *and* the fact the whole casserole is just smothered in Mexican cheese. Add a couple of dashes of hot sauce, and it’s pretty close to perfect.

25. Delicious Fiesta Chicken Casserole

I have so many favorite Mexican Crockpot recipes you can whip up in a jiff. What’s great about this one, though, is that it’s a 20-minute dinner that satisfies your cravings for Mexican food in a flash.

Just toss the pasta, chicken, and Mexican accompaniments in the pot and let it do its thing. Once it’s done, you’ll move it to the oven to get that cheese all nice and gooey.
