10 Easy Leftover Prime Rib Recipes

I love leftovers. As in the food that sits in the fridge and somehow gets better with time. I like to eat it. And sometimes cold.

But when that leftover container holds prime rib? Game over. We are talking about the highest quality beef just sitting there waiting for its second act. You could reheat it and eat it plain. You could do that.

But let me tell you what my version of leftover prime rib is all about. It is about savory sandwiches and rich soups. It is about taking that fancy holiday meal and turning it into a weeknight warrior. It is the definition of comfort food meets luxury.

I am just going to put this out there. Tacos are always the answer. It does not matter if it is fish or beef or chicken because tacos are there for you.

You need some queso fresco and lime juice plus cilantro and salsa. I find that store bought tortillas work perfectly fine and they save you some time in the kitchen. That is definitely a win in my book.

This sandwich is a little bit messy but it is so worth it. Just embrace the mess because the flavor is mouthwatering. The combination of meat and cheese makes this incredibly hearty and filling.

You throw the prime rib and everything else into the Instant Pot and just let the magic happen. It is so deliciously good. I honestly add extra meat sometimes just so I have leftovers for days.

7. Leftover Prime Rib Phyllo Pot Pie

Please do not run away when you see the long ingredient list. Most of it is just veggies and seasonings anyway. And honestly all the really good pot pies have a list like that.
